Anyone have a GOOD deer meatloaf recipe?
The wife made one last year and it was incredibly good but was very loose. Needed another ingredient as a binder.

Please share. I have a small bit of last years meat that needs to go.......fresh meat coming soon.

Try the same recipe and add an egg.

I like to mix some ground pork fat with the deer to get it to stick.

Sent barefoot from the hills of Tennessee

Have not made it, but both of these is what you need to add, you need eggs?LOL

In any Meatloaf whether you use beef or Deer you need to add some Oats or Cracker Crumbs and a couple eggs mixed with the meat. Mead it all together really well along with a can of tomato sauce and add chopped onions and bell pepper if desired. Make it into a loaf and bake about 50 minutes in preheated over @ 375 degrees.   Yea I do cook a lot................ :ugh: Mother had 5 sons and no daughters so she taught all 5 sons how to cook about anything and wash dishes.

Depending on how large of one you want, here is a great recipe.

This fills a 3 quart pyrex dish. Can be halved for a smaller dish.

1# venison burger

1# hamburger

1# pork sausage

2 eggs

1/2 to whole onion  (or 2 packs onion soup mix)

Splash of milk - mom and wife say they eyeball it so who knows how much

Breadcrumbs - 1 cup up to 1.5 cups depending on how firm you want

Shake of garlic powder - approx 1 tablespoon

Worcestershire or other seasoning to taste

Cook at 350, drain any grease off every 20 minutes or so.

For topping, mix ketchup, Worcestershire, and brown sugar. They have no measurements available for this either so mix and taste. Wife is guessing about 1/2 cup of ketchup, 2 tablespoons of Worcestershire and brown sugar. If too runny add more sugar or ketchup.
