So what produce are you freezing or canning this year?

So far I've canned the first run of green beans, made pickles, and after a trip to the coast frozen a bunch of butterbeans.

What's everybody else got going on?

Canned Green beans, potatoes, and strawberry jam so far. Will make some pickles, salsa, and can some peas in a couple weeks. Might can peaches if I get a deal on peaches.
Got some tomatoes in the dehydrator right now making sun dried tomatoes. I'm gonna run some squash and zucchini in it while I have it out too. Wife read that shredded and dehydrated it's good to add to soups and stews. Like most I got plenty of squash to experiment with, lol.
I try to only put deer and other meat in the freezer. But did freeze 3 or 4 dozen ears of corn, a couple jars of pesto, and some strawberries so far.

Frozen bell peppers, squash, and sweet corn. Soon we'll have pinto beans and black eyed peas to freeze.

 

We've canned blackberry jelly, dill pickles, green beans, salsa, and tomato sauce.

 

It's been a very good year for the garden here.

 

A few more months and we'll try to put up some more deer burger, sausage, steaks, backstrip, and jerky.

Back in February, we bought a house in the country, and for the first time ever we had a respectable sized garden. I've already made a dozen jars of pickles and a dozen jars of relish. The pickles are a bit sour, so may have to find a new recipe next year.

 

I've got about 3 gallon sized freezer bags of green beans and one or two of squash in the deep freeze.

 

We have a thornless backberry bush that has produced over a gallon of berries, and is still going strong, I froze them, and have been adding a handful of them to my oatmeal every morning.  :yum:

 

We just got a pressure canner, but have not had a chance to use it yet. We are going to have more tomatoes than I know what to do with, so I guess we'll be using the canner on them. We probably have 15 tomato plants, and they are so full and heavy with tomatoes that they are falling over.

 

We also planted a whole row of pumpkin. Why didn't someone tell me that is way too much pumpkin? It practically took over the whole garden. Fortunately we planted it next to a gap we left unplanted. It consumed all that space, and crept out under the fence. I guess we'll can some pumpkin, but I don't even like it all that much.

my wife and I picked up a pressure canner awhile back...we are about to get it out and start canning some stuff ourselves...probably the usual beans/peas/tomatoes and some soups and such....

We are behind this year. I did make a couple of big batches of different peach jams and we  canned a boatload of pickles but that is about it. Going to have to get busy soon on a bunch of tomato stuff.

By the time we are done we will have tomatoes, green beans, squash, potatoes, black eyed peas, jalapeños, pickles and blackberry jam all put back. The stuff has been growing like crazy.

Tomatoes, lots and lots of tomatoes.

Not enough cucumbers to make pickles this year. I'm sure we'll eat all the okra too. Gonna get some corn from the local farm to freeze. Also got a couple gallons of blueberries from my parents. Wife made strawberry, blueberry, and peach jam.

Blackberries, peppers, 2 pigs, green beans, a bunch of fish and whatever else presents itself to be frozen in the near future!

Make darn sure your jars and lids are clean and sanitized.  I suggest you do the canning (pressure or water bath) outside (grill, turkey fryer, fire pit, etc.).  A great big pot of boiling water on the stove for a couple hours will have your AC working hard to keep up this time of year, and if you have an "oops", it's easier to clean up.
