You cook the sausage first, then mix it all together before you throw it in the muffin pan. Easy as can be. She took another tube of breakfast sausage out of the freezer a few minutes ago because she wants to cook more tomorrow night  :yum:

Spray your muffin pan with Pam if you aren't using muffin papers.

We have them pretty regularly, and you're right....they are great.

Oops, thanks for reminding me Greg! Sorry about that guys. ^^ is right. My wife actually wiped Olive Oil (Not Popeye's woman) in the muffin tin, either will work but do something or part of the muffin will not come out lol.

I make a sausage casserole very similar to that and it is great.

2lbs breakfast sausage cooked

1 can creamed corn

1 lb grated Cheddar cheese

make up a batch of cornbread like you would normally do if making a pan of corn bread.

In a 13x2 cake pan spray with Pam or coat with light cooking oil and add a small layer of corn bread batter, then pour creamed corn from can spreading it across first layer of bread coating, add another layer of bread batter. Then spread out sausage around over second layer of bread batter and pour more batter over sausage and then spread grated cheese over bread batter layer and then top with remaining batter to cover cheese. Bake in oven at 350 degrees until top layer of bread is golden brown. Remove from oven and allow to cool at room temps for about 3 hours and serve like a Lasagna casserole in slices. Makes a great meal........................jmho
