Any good squirrel recipes?

I'm gonna go out tomorrow and take care of a few squirrels. I've always just cleaned and gutted and cooked in foil on the fire but am looking for some good easy recipes. Might just start a new years tradition...

Cut em up, roll em in flour, and fry em like you would fried chicken.

Boil off the meat and make squirrel n dumplins.

That's all the recipes you need :)

I had the same question, and turned to my buddy Youtube. Writing a receipt doesn't do justice compared to watching it all done on video with mouth watering and wiping slober off the key board :yum:

Parboil them tree rats, then dredge in milk/egg then salt/pepper/flour (repeat) and then fry in cast iron skillet in bacon fat. Mix some leftover flour with drippings and whisk in some milk for gravy. Serve over hot bisquits. Edited by homeagain

Oh damn! That is making my stomach growl now!

Other good options: parboil, then either beer-batter and deep fry or dredge in milk/egg and then Panko and deep fry.  Personally I like 'em parboiled, deboned, floured up and have chicken-fried squirrel on biscuits with gravy as above the best.

My fav... Don't boil first. Quarter then up, dip in Milk/egg then roll in flour. Pan fry in a few tablespoons of bacon fat till brown on both sides. Do this in a cast iron skillet. Heat oven to 350, add enough water to the pan to go half way up the meat, cook in oven till tender. Gets tender and makes gravy. Serve over the top of chees grits.
