As for prep, it depends a lot on the hog and the conditions you took it under.

If it's an old boar or if his dander was up, the meat will be suitable for little more than sausage.

Younger pigs and females you can treat just like regular pork. It'll be leaner than you are used to, but the flavor is amazing.

I'll usually save the hams and the ribs... the rest gets turned into sausage.

One thing to remember about hog hunting, is the bigger mature boars will stink like no tomorrow and be unfit to eat. If you want one to hang on the wall that's fine. If you want one to eat, get a sow or younger boar for your freezer. Once you smell a mature boar, and smell it's meat cooking, you will NEVER forget that smell nor will you want to eat it!!
