First ever batch of venison jerky...

...is in the dehydrator! Cant wait for it to be done!!! The smell is already blissful. I used a sweet and spicy recipe. Im not kidding, i hope it tastes HALF as good as it smells. Sorry for the crappy panoramic pic, you get the idea though.

As for the stuff in the background, we like our liquid encouragement in this household. That is all.

My kids keep telling me to hurry up and kill a deer because they are out of jerky.

Do you use a store bought marinade or home made?

Nice!  What a great season we're in ... sure y'all will enjoy the jerky.  I always sneak in a little extra spice/heat ... that keeps the kids from eating too much, and it goes much better with malted beverage.

Its a homemade marinade. but I cant take credit for the recipe. I found it while searching google for a spicy jerky marinade recipe. here it is.

I didnt use the lemon juice, and added 1 tsp cayenne pepper. It turned out awesome!!!

Black Pepper Jerky is my favorite.  I have one that I use with venison a lot.  Anyone have experience grinding up their jerky and using a jerky gun?  Thinking about buying one this year.  Have heard good things.

I've tried it and prefer to slice the meat.

I have a buddy that makes some killer deer jerky and he is always generous with it when it comes to me. He has one of those machines that vacuum seals it and it keeps a long time. I guess he might be generous with me and the Jerky because back about 5 years ago I gave him a 10 tray dehydrator because I don't hunt any longer and beef has gotten to expensive to buy for it...........jmho

Same here. Im happy to say this jerky turned out amazing. Ill be using that recipe again, with maybe just a small tweak. Really happy with how it turned out though!

This is a REALLY good recipe.  Although, I deleted the lemon juice and replaced it with a healthy dose of Wild Turkey American Honey.  

 

I have some in the dehydrator now.  I can't be around it when its dehydrating……I'll be knawin' on raw meat like a frickin' dog!  Man it smells good.

I told you! Man the smell alone is almost better than the jerky! Glad you like the recipe. I took out the lemon juice as well, and added some cayenne powder. I made three batches of venison jerky with this recipe, and none lasted over 2 days! Im out of the good stuff now, so Im gonna try this with beef as well.
