I had probally the single best beef chalupa for dinner! To bad it was just one that was good

No, I live with my girlfriend, but she is out at her friends, so it was either fast food or bach food, and I went with bach. I learned from my last chalupa to make that my last chalupa. :D

From the looks of them, and maybe the pics are deceiving but they look a bit dry.

When the wife makes Rosemary potatoes there is a lot of butter or margarine involved. Might want to look at that part of it.

Tonight we had patty melts and french fries. Ooof I can feel my arterys hardening as I type. But man oh man did it taste goooD!!!! :mad:

Eh, they weren't really dry. The outsides did get a little crisp, but that was my intention. I coated them in olive oil before seasoning them and cooked them with the oven at 450. Just a little crisp on the outside, and done all the way through.

We should start having TGO regional cookouts or something. :D

Screw recipes, I cook by instinct. All my recipes would take the form of "throw some salt and pepper on there until it looks about right" or some such.

I make a decent pot of chili, but I don't think I ever put the same stuff in there twice. It's highly variable. I just know that there will be onions, peppers, some meat, and crushed tomatoes involved. The seasoning gets done on the fly to taste.

My mom makes her chili that way. Ive asked for a recipe and she says she doesnt have one. Shes made it for so long she just goes by taste. I love her chili, its yankee style. Thick and meaty, onions and alot of cheese.

nah, you gotta have butter on them kind of potatoes or they will end up dried out.

I like the idea of olive oil and all but my wife would not approve of the outcome, LOL

The rosemary and other spices should be put on and mixed around before pouring into the pan you are going to cook in. You may as well want to try the microwave on them instead of an extra hot oven. 450 degrees is kind of extreme.

I lost all gumption after the 6th beer while watching the Olympics, so ended up eating some pasta salad I made yesterday morning. So the fajitas are for lunch today before I repeat yesterday's performance.

I do have all of the fresh ingredients for the pico de gallo (or as I call it pico de gato). May substitute a chipotle for the jalapeno.

I think the old lady went on strike. No dinner last night. Of course I was supposed to dig some chicken breast out of the freezer and forgot.

Ended up eating White Castle cheeseburgers for dinner. They were pretty good, but being from the frozen food section they are not nearly as good as the real thing that comes fresh out of the shiny white building.

I had some of those TGI Fridays potato wedge things with cheese and bacon on them. They're quite good, for frozen food. Big 17oz. can of Red Bull to drink.
