The menu has changed. I found some calves liver. Anyone know what I do with it? :D

Feed it to the cat or use it a bait and go catch some good catfish.:D I can't stand liver. Ewwwwww.

On a brighter note: home made meatloaf, mac & cheese, corn on the cob and herb and butter rice. :D

Believe it or not, I actually found a site that talked about that. You need to freeze it for 14 days to kill off the squiggly things in it.... I guess if I can handle raw oysters and still squiggling grubs in survival training.... YUM!!!

I'm going to cook it (and onions) in bacon drippings in a cast iron skillet. A little flour and seasonings on it and down the hatch.

A little of the reheated squash casserole and iced tea (or iced something....) and I'm done.

Any of you folks, besides me, have a bacon drippings container? It was normal when I grew up.

I was out at Wally-world this morning and ran into bottles of Oak Leaf Cabernet Sauvignon and Merlot for less than $3 a bottle. Since I just wanted some for a beef roast, I grabbed it. 13% alcohol, that I couldn't care less about, but I figure the $3 goes for the alcohol tax.

This stuff any good at all?

It's a decent cooking wine or cheap sip. It's not anything I'd say I splurged on lol

Pulled bbq sandwich with coleslaw and soem Texas Pete. Side of fried shrimp, mashed potatoes and gravey smoked sausage bacon and mac and cheese. :D I was hungy... now Im full and tired as hell!

Wilmington was always interesting. I always hit there about twice a month when I lived in Raleigh. It always poured down rain when I went there.

But if I still lived in Raleigh, I'd be headed down toward your place.

It rains agood bit, but not enough to bother me. Unless its that sideways rain and Im stuck outside working in it. When did you live in Raleigh?

i figured bacon grease and onions for the liver, smells great cooking but it wold take a lot of money to bribe me to eat that.

Oak Leaf wine is swill. no doubt for that price it is closed out.

What liquor store did you get it from?

We are carrying a line of cheapo wine that has gone over pretty darn well. It is called Forestville. There are about 12 varieties of it. Retails for 6 to 8 bucks a bottle.

1973 - 77. I liked the place. Found my Ember's Club ID the other day. Back then, NC did not have liquor by the drink. But you could buy a "club membership" Another DUH moment for a state legislature.

I get to buy in sensible stores - in Virginia. :D

Haven't bought overpriced wine in Tennessee in quite some time.

Yes, I figured it was basically swill, but would probably do for a pot roast, cooked all day. Don't need great stuff to flavor a roast. Right?

I guess my construct is that crappy wine is crappy wine and not good for much of anything. But semi-crappy wine is OK for cooking beef, which is gonna taste crappy anyway.

I am not a chef, but I believe that the purpose of wine in the cooking process is to break down the fibers in the meat, therefore making it more tender.

Some of the wine flavor will effect the meat. The alcohol cooks off.

Best to drink heavily.
