What was for supper?

The wing thread was turning into a hijack so I thought I would make this thread.

What are you having for supper, or what did you have?

Tonight we had a Philly Cheese Steak pizza, actually a variation of that. It was a Jalapeno Philly Cheese Steak pizza, home made.

My wife came up with this after we had a Philly pizza at Smoky Mtn Brewery a couple of years ago.

She uses a store bought crust. not sure which one but I know she gets a specific one that she deems the best.

Her normal version of the Philly has meat, green peppers, mushroms, and onions. Tonights had Jalapenos in place of green peppers and mushrooms.

The sauce is ranch dressing, and cheese is regular mozzerella. :hat:

Far and away my favorite pizza.

I am blessed with a wife that is a GREAT COOK!!;)

Kelley and I did our grocery shopping for the next week or so, and it's been a really long day, so we just grabbed Wendy's on the way home. But tomorrow, I'm grillin' up some chicken and whatever else I can rustle up!

I made an enchilada casserole with some refried beans on the side.

Topped the casserole with some shredded lettuce, tomato slices, and sour cream.

Topped the beans with some fresh shredded cheese.

All I was missing was a nice cold tecate! MMmmmmm...

When I got home Mrs. Double After had made sauteed tilapia, bacon wrapped shrimp and wild rice. She's a great cook. I enjoy cooking too but I keep it simple. With me, the five basic food groups are meat, fire, salt, pepper and beer.

We had Skinless Chicken Breasts pan fried, with greek seasoning, mash potato's, Salad with "Ripley" tomato's, since mine are slow to turn:grouchy:, they are good, bought from a road side vendor. For desert, we had crushed fresh strawberries over the top of Angel food cake, with fresh whip cream to top it off.

My wife is a great cook, our problem is time. With 4 kids, we have none. So it usually is some chicken variation, starch and veggie.

88 qts later I'm still cannin tomatos so it's what ever we can find. :)

We started late I guess, this is really my first year to try a garden, my dad and grandparents always had one, and I have put a plant in here and there, but this year I did more. Got BetterBoy Tomatos, cherry, grape and roma's. Kids love the cherry and grape's, and they are slow to turn. Got few cucumbers so far, my squash is blooming like crazy, but they are all male flowers, no females which produce the squash. My pumpkins grew like crazy then all of a sudden, they stopped. Not sure if I had a disease go through or not. Not many insects, got bees every morning on the flowers. Keeping them watered, but not too much. I'm a little frustrated with my garden, I am starting to plan for next year now. Frustrating, but fun so far. The few tomato's I had were outstanding!

Rant over!

Last night, frozen pizza. But over the weekend I did my version of Japanese steakhouse fare, fried rice with teriyaki steak & chicken.

Mountain House Spaghetti with Meat Sauce. It's a camper meal. Just felt like trying it, so I did. Not too bad at all.

I'll probably have some Dinty Moore beef stew tonight.

rumor has it the old lady is roasting a chicken for supper tonight. The only suspense left is what sides she will come up with. I like her Rosemary potatoes a lot, so thats what I am rooting for.

Hmm, last night I just finished off some leftover taco stuff from Saturday. Had some beef and a pair of tortillas sticking around, and they made for a decent dinner. I think tonight I might eat up the remains of the pork loin roast I smoked Sunday afternoon. Maybe whip up some mashed potatoes and wilted spinach to go on the side.
