If you watch the CMP forums, (Parts for Sale>M1 Garand), you'll see USGI walnut stock sets appear fairly often.  My SA came with a CMP stock, and I was able to pick up a nice original finish USGI walnut set for a decent price...correct period cartouche, etc for the SN.

Wipfel, the wood is flawless because it's a probably a brand new stock.  CMP replaces alot of the original stocks on service grades as they are often all beat up.

 

That's what they did on mine. Guys on the CMP forums call them "Pumpkin" stocks. The color is easily changed, however.
