Smoked Trout

Well, Fort Campbell's trout streams gave up some Rainbow and Brown Trout again! These beauties just came off the smoker!

I dried them with paper towels then rubbed them with olive oil. Then I applied lemon pepper inside and out, topped off with just a touch of paprika. I normaly smoke them with a slice of lemon, but was out of them. Smoked with hickory chunks.

I haven't had rainbow trout since 1990. It has been too long.

Do I sense a fishing trip? Sounds like you're due one.

Yes indeed. We caught some on the Green River right out of Tellico Plains.  The wife and I have talked about a mini vacation there in the spring.

My papaw use to just dip them in buttermilk, egg and flour, and then fry in a cast iron skillet. I love to have some trout, soup beans, and a mess of ramps. Did I mention corn bread, and a large tall glass of whole milk.

I had my first fresh smoked trout earlier this year, and it was amazing. I gotta get me a smoker soon!

I like to put a little onion and lemon in them them grill or smoke them. I need to go catch a couple this thread is making me hungry.

I've used onion in them before. It is pretty good.
