Good Marinade for Wild Game

My son wanted some venison steaks for dinner the other night. I pulled out an old marinade recipe that I had not used in a couple of years. I forgot how good it is. It is actually a duck marinade but works well with all wild game.

I usually let the meat marinade for 24-48 hours. it really makes the meat tender and gives it great flavor.

All Purpose Marinade

2 cups red wine

1/2 cup Balsamic Vinegar

1/2 cup Soy Sauce

1/4 cup Vegetable Oil

1 onion chopped

2-4 garlic cloves chopped

1/2 teaspoon cracked black pepper

If you want to get fancy, try this. Reserve some of the marinade. While the meat is cooking, simmer the marinade and let it reduce by half. It will thicken slightly and intensify the flavor. Drizzle this over the meat.

Great looking recipe!

I've used a similar one since I was a young boy. I also use a few variations if you're interested:

Substitute 2 tablespoons Miso paste for the soy sauce.

This give it a little more body and adds a nice glaze to the meat.

Or

Add 1/2 tablespoon Thai red curry paste to your recipe.

This adds heat, sweet and a ginger kick. One of my favorites, for sure.

Almost the same as mine.

2 cups red wine 2 cups Burgundy

1/2 cup Balsamic vinegar 1/2 cup honey

1/2 cup Soy Sauce 1 Tsp sea salt

1/4 cup Vegetable Oil 1/4 cup rice oil

1 onion chopped 1/2 cup Bragg's apple cider vinegar

2-4 garlic cloves chopped 1/2 cup onion powder

1/2 teaspoon cracked black pepper 1/2 cup garlic powder

1/2 cup med. milled black pepper

1/2 tsp Thai red curry paste

Best I've made for the Asian carp.
