You need to take another geography lesson - going to Vegas from the East, Hoover Dam is on the left and the Grand Canyon is on the right. Going to Vegas from the West neither come into play unless the plane makes one heckuva' big circle.

37,000 feet, Grand Canyon on the left, Hoover Dam on the right, I'd suggest they were flying East, *over* Vegas.
