Carne Asada Backstrap with a birds nest.

Took this fat doe on closing weekend last Saturday. Took her home and hung her up in the garage.

Then I went to work cutting her up.

Marinated the backstraps for three days. Got my grill pan hot and browned both sides in butter. Then I wiped the excess butter out and added my reserve marinade. Simmered the backstraps until just about rare.

Sliced it up and put a little of the hot marinade on the slices. Put a nice birds nest next to the slices and had a great meal. For those not from the south, a birds nest is when you put your green peas in the center of your mashed potatoes.

Football and a great meal. That is a great Saturday evening.

16 oz jar of salsa - I used hot

2 packets of onion soup mix

1/2 cup of lime juice

Use a blender to mix it to a smooth consistency. Use half for marinade and half for cooking.
