For those of you on low-carb, high-protein diets, check out Power Crunch protein bars. They are the only bars that I have found that actually have more protein than carbs, roughly 14g protein to 11g of carbs, and they are freaking delicious. They make a great healthy snack.

Have you ever tried Oh Yeah! bars? They are the bars I eat when trying to consume extra calories because they are loaded.

Calories: 380

Carbs: 31 (They have a net carb count of 12g, and the remaining carbs have a lesser and minimal effect on blood sugar.)

Protein: 26

Also, they are the best tasting bars I have ever tried, and I have tried a bunch of them over the years. I wouldn't eat these unless you are trying to gain weight or your burn a lot of calories a day. Everybody else should avoid them like the plague. I only mentioned these since you are trying to get your weight back up.

The only problem with those, is the high carb content will force me to "dump". I have what's called Dumping Syndrome since my GB surgery. If I eat too many carbs, then they get "dumped" into my system too fast and make me feel like absolute crap for about an hour. I have tried the Oh Yeah!s and they're not bad, but after half a bar I started feeling the dumping coming on.

I believe the hypoglycemia aspect causes the craptasticness.
