I think it all depends on what the person is doing with the knofe.

If he's just wondering across a parking lot, then a quick retreat and call to 911 will do.

If he's coming directly at me with no option to get away, then I will probably shoot him.

If he's slicing me a piece of pie, then I will probably wait until he hands me thus said piece of pie before I shoot him.

That seems kind of hasty. Shouldn't you wait and see if the pie is any good, first? After all, you may want him to cut you a second piece.

The pie might suck and you have to cut him anyway. Can't be handing out bad pie.

There is no defined distance....I have heard of instructors shortening classes by 4 or 5 hrs...not to say instructors are bad. I am just saying i think it is honestly hard to do that as a job. My instructor was a family friend and I told him it would be hard for me to do this class, because I have to decide if they are capable of following the laws and keeping themselves and general public safe. Dont you think it would be hard to be an instructor....maybe he said 17ft just to cover bases to make sure your not shooting across the parking lot at a bad guy..
