Injected and rubbed down with Tony Chachere's Creole Butter yesterday. Will hit it with a couple hands full of apple chips and let it cook low and slow overnight.

Fresh roasted coffee beans......you are a blessed and cruel man! Ahhhh I can smell them now.... Looks like your Day of Thanks is well under way!

Nice work!   I smoked a turkey breast, a ham, a whole chicken, and a pork loin yesterday. Hope everyone has a great Thanksgiving.

Where do you buy your unroasted coffee beans and what region are the coffee beans grown for home roasting?

What is the flavor notes to the coffee?

In Nashville, there is a coffee shop called Crema that imports micro batches of unroasted beans from all over the world and fresh roast them onsite. I would buy a bag based on their roast level and flavor notes listed on the bag.

Surprisingly, coffee can a lot of different flavor notes like floral, citrus, caramel, dark chocolate (bitter dark chocolate) or milk chocolate (I haven't found that one yet).

The problem I encountered is when I found a specific coffee bean at Crema that I liked, I could not buy that micro batch anymore.

There are several sources online, including Amazon and eBay. One of my favorites is sweetmarias.com. These are from the Dominican Republic. I just got 10 lbs from Guatemala.
