Fresh Cracklin's & Pork Rinds

A friend of mine killed a couple of hogs this morning. I swung by and helped a bit after physical therapy. Came home with a few lbs of sausage and a slab of back fat. Rendered about 5 pints of lard with the side benefit of fresh cracklin's and pork rinds. Momma says I stunk up the house. Smells delicious to me.

Well, f.....!

I put them in a couple of zip-loc bags, but forgot to put them in fridge before I went to bed. Woke up this am to find two ripped open empty bags on the kitchen floor. Our two GSDs got a treat last night. 

At least I still have the lard to make biscuits.

Lemme guess neither one of the dogs knew anything about it?  lol

As a kid there was a slaughter house on the edge of town, not a big operation just a place farmers and hunters could bring animals to be processed. They always had fresh pork rinds that they made to share, when we stopped in to watch.

Man I miss cracklins.  I mean REALLY GOOD cracklins like yours.  As a kid we killed hogs every November and put up all the meat.  My grandfather would make three kinds of sausage: mild, hot, and the last was so hot it had more pepper than meat!  My "Important job" was to crank the handle on the meat grinder!
