I have a 18 page .pdf of build plans for a very sturdy shooting bench.  Not sure how portable it is but may be a good starting point.  PM me your email and I will send it to you.

Probably not what you want, but I need some tall saw horse for a project so I bought sawhorse brackets that fold and used longer 2X4s to get the hight I wanted. Later when I needed a portable shooting stand I took a piece of 3/4" plywood about a foot wide and screwed two 2x4s to the bottom space apart to slide over the cross 2X4 of the saw horse. I then drilled a hole through all three 2X4s and put a carriage bolt through with a wing nut. Makes it easy to take off when I need the saw horse. I covered the plywood with carpet.

I have had one of these portable shooting stands on my Amazon wish list for awhile

Google Fu will provide you with hours of reading to find what you're looking for.  Are you wanting something for varmint shooting, or LR target, etc.
