  6. Bush didn't start most of it. But, he and congress didn't do nothin to help either. The current bunch won't do anything but make it worse. Absolutely! and obama will blame bush, and if we survive who ever follows obama will blame him, and the saga will continue.
  7. My oldest came home with some homework in the 5th grade that wasn't accurate to the constitution. I had a meeting with the principal and her teacher, who I happened to have in the fifth grade. I asked what they thought they were tryin to teach my kids, and pointed out to the teacher that "this ain't what you taught me, and in case you forgot I brought you a copy of the constitution!" The principal got flaming red in the face, and the teacher, smiling, asked me for more copies! She was one of the good ones. long story short, their homework after that was changed. I would consider homeschooling, I think that's the way We're going next year. I've taught my kids that when they're being interrogated about personal stuff, what's at home, etc, etc, that their answer is "You need to call my Daddy!!" they haven't called....
  8. Here's a good recipe, it's for turkey but it'll work with any poultry or pork. I did this for Christmas, and Easter, it is very good. I brined the turkey overnight, I probably wouldn't brine a chicken or a game bird for more than 4 to 6 hours or so. Pork ribs & loins the same. Shoulders or hams overnight. Pork chops 2 to 3 depending on the cut 1-2" I don't know how it will do with red meat yet. I'd probably use beef stock instead of vegetable stock. You can experiment, just keep the basic brine (salt, sugar, stock). add a cup or so of vinegar, wine, beer, or likker. Spice and herbage of choice. Let me know how it goes if ya try it. Good Eats Roast Turkey Prep Time: 15 min Inactive Prep Time: 7 hr 0 min Cook Time: 2 hr 30 min 1 (14 to 16 pound) frozen young turkey For the brine: 1 cup kosher salt 1/2 cup light brown sugar 1 gallon vegetable stock 1 tablespoon black peppercorns 1/2 tablespoon allspice berries 1/2 tablespoon candied ginger 1 gallon iced water For the aromatics: 1 red apple, sliced 1/2 onion, sliced 1 cinnamon stick 1 cup water 4 sprigs rosemary 6 leaves sage Canola oil Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled. Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining. A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes. Remove bird from brine and rinse inside and out with cold water. Discard brine. Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil. Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving. Serves: 10 to 12 servings
