Longest cook I've done with the WSM was all-nighter for 18 hrs - had it full of pork butt. Hit the stall at around 165 degrees or so around 11 hours in, and thought it was never going to get movin' again. Brought em off at 205 degrees, and you could basically shout at em and they'd fall apart...that pig did not die in vain. Smoker never topped 225 degrees, and still had charcoal left from the approx 20 lb it started with. May hafta try the cranberry juice addition for turkey brine - I've only brined a couple using an apple juice/honey/salt/sugar brine, and was quite pleased. I can see cranberry adding a nice flavor! Which wood(s) do you prefer to use? I find that I'm slowly moving away from exclusive use of hickory. Of late, been using pecan+apple+peach for ribs, oak+hickory for brisket/beef, and pecan+apple+hickory for pork butt/shoulder. Just came in to some alder for fish/salmon, but haven't had a chance to use it yet.

As far as storage: I've been using a vacuum-sealer of late (Food Saver), and have been VERY pleased. The last brisket I smoked ended up supplying enough flat to put 3 meals worth sealed in meal-portion bags that went to the freezer. Chopped the point and sealed in 1 lb portions to supply meat for BBQ beans when I want them. Same deal with leftover pulled pork butt. I tried and tried to get ribs et all the way I wanted them using my gas grill. I fianlly purchased a Weber Smoky Mountain smoker back in January, and have been extraordinarily pleased. Perhaps more importantly, so have my wife and family...purely coincidental, I'm sure, but it seems that most of my recent firearms purchases have come just a few days after cooking up a nice tender brisket or several slabs of ribs...

Brad Pitt frequents the Hickory Tree area to fish the South Holston river - supposedly has purchased some property in the area along Holston Mtn. Just across the state line, there are several country music folk who own property in Scott County, VA in the Poor Valley area - which is also home to the Carter Fold (AP Carter et al). Johnny and June Cash were frequent visitors.

And a major reason that the only use that rag sees in my house is as charcoal starter. I quit subscribing to it years ago, yet they continued to throw it in my driveway (even after acknowledging that I didn't have to pay for it). Finally had to hand deliver a letter threatening to have the courier arrested for littering if it showed up tossed on my driveway again to get them to quit. -

Second the notion of looking at Gamaliel - have ordered lots of components from them, and our club buys from them as well. And dont forget to look for the Win and Remmie rewards programs each year. The major hiccup to rolling your onw right now is the cost of shot.. New stuff is $40 or more for a 25lb bag. Buying in bulk is the key to cost-effecitve relaoding for shotgun. I load my own trap loads on a MEC 650, and even using the club discounts from Gamaliel, I am not very far under the breakeven point. Our club reclaimed several tons of shot this year and is offering it to club members for $30/25 lb, and that has helped tremendously. BTW - I use Rem Gun Club hulls, Nobel Sport primers, 18 gr of Red Dot, Downrange JXL wads and 1 oz of 7 1/2 shot. The GC hulls will give you 8-10 reloads, The NS primers are at a very nice price point and give very little probs (I've had 1 dead one in the last 3 years). I buy wads and primers in cases of 5K and Red Dot by 8 lb kegs (looking at going to Promo powder, actually, when I shoot up the last of a 24 lb order). I bought 2000 GC hulls for .01 apiece from a guy in S Fl which will be several years worth. And if you buy shot from Gamaliel, you get a bit of a shipping price break since they use USPS "If it fits it ships" for each order of 2 bags (50lbs).

Son and I took both of my Pietta BP replicas out today: a '51 Rebel Navy (.44) and a '58 New Army (.44). 25 gr Pyrodex P in the Navy, 30 in the New Army, also with felt wads between powder and ball. First time he'd ever shot them...looks like it definitely ain't gonna be the last. -

Interesting question: if an employer's workplace policy prefaces their prohibitory statement RE firearms possession with the clause "Except where state or local law provides otherwise", does the recently passed parking lot legislation in TN meet that exception? Said policy states the prohibition covers "all Company premises", but does not specify inclusion or exclusion of parking lots (the Company in this case does own the property on which the parking lot exists). Friendly inquiring minds want to know...

Just to underscore the idiocy of R leadership pushing this version of the bill, there were amendments offered that would have clearly and easily rectified items 2 and 3, without touching the all-hallowed employer provision...yet, the pig-headed asses refused and insisted that the bill pass untouched.
