It's my opinion and I have practiced to load into the chamber over the top of the action so I keep them brass up in my side saddle. I'm looking at going with one of those Velcro side saddle setups I've heard that the bolt on type can come loose with lots of shooting also don't overtighten the bolts cause they will cause the action to bind.

I don't recommend a stroker motor for off road vehicles due to the fact that most all stroker motors have overheating issues and a 383 is a fairly radically bored and stroked small block Chevy. I would find a 350 short block and add decent heads, cam, intake and carb since that's where most of your power is made anyways. And by decent I don't mean the most expensive but if you do some research there are some combinations that just plain work well together.

If you can't pull 33s with 4.10 gears and that 305 then the motor is shot. I daily drive a 4cyl Tacoma on 33s with 4.30 gears. And 80 mph is no problem, and it has 300k miles on it
