  1. When you say hot and fast smoke, what temp do you use and for how long?
  2. What I bought yesterday was Atlantic Sockeye
  3. This sounds fabulous! Look forward to trying it. Thanks!
  4. Bought one of those slabs of salmon at Costco today. Looked up a recipe to smoke it on the Pit Boss. Did a salt and brown sugar dry brine for about 3 hours (supposed to be 24 but I didn't have that kind of time.) Washed the brine off after about 4 hours and put it on the smoker "low and slow" for an hour. IT WAS FANTASTIC! First time I've ever smoked salmon before and it will definitely not be the last. Do any of you have any good rubs/brines/smoking ideas for fish?
  5. Last year I had a solid black hummer with one tiny red dot on its throat, and he was tiny,
  6. Time to replace some light bulbs . . .
  7. Walking in front of the King of England as he entered Westminster Abbey
  8. Tomorrow I am officially welcoming summer by putting my garden in and getting the smoker going. I'm doing chicken wings. Any of you have a great rub or ways of smoking chicken wings?
  9. Everything stated here is right on target. As a therapist I have had to read and clinically process manifestos and various writings of persons before and after their death. You never get a well written, well documented "reason" for what the person did. 99.9% is illogical because it is wrapped in the reality of the writer, which only they understand. As to releasing this information, it has two results. It makes a lot of hurting people who are already asking "Why?" hurt even more because there is no comprehensible answer. Second, emotional healing is like a cut; over time an emotional "scab" forms over the heart and soul. When a great deal of ambiguous information is released it tears the "scab" from people who are suffering in unimaginable ways, and they have to start the healing process all over again . . .
  10. My daughter does the same thing; she drives to M'boro from Nashville because the dealership there is MUCH more trustworthy.
  11. I have had the same comments. This past winter I spent a TON on wild bird food, but the joy it brought me has no price on it. I work from home doing teletherapy three days a week and am in the office two. My office is at the back of the house with two large windows that face the back yard and my feeders. To watch the doves cluster, the Blue Jays come and go, and Cardinals and Wrens pass by brings a lot of joy while I am talking with folks. The Bluebirds have returned to my Bluebird box and they are fascinating to watch coming and going.
  12. Two grosbeaks on my feeder and two hummingbirds fighting for their food as I type!
